Sometimes you’re just cooking for one and only need half a cup of coconut milk or you use half a cup and need to store the rest of it. Yes you can put it in smoothies, in your cereal (fancy!) or make another meal with coconut milk. Personally, I find that by the time I remember to do that it’s already gone off. Anytime I have left over coconut milk I pour it into silicon cupcake holders (about half a cup measurement) and pop them in the freezer. When they’re frozen, I pop them out and place them in a bag in the freezer. Then anytime I’m cooking and need coconut milk I just pop them in out of the freezer. They can take a little while to defrost but it makes coconut milk super easy to use and at over £1 a tin, much more economical to use!
