Recipe: Pineapple Rice

It’s the week before payday, you’ve had your veg box delivered, you have a pineapple about to turn and not a lot else. What do you do? Boil some rice, chop up the pineapple nice and small, chop up the old wrinkly leeks, open a tin of chickpeas, chop up the cavolo Nero/kale whatever greens you have, sauté the veg with garlic, cumin, curry powder and a bit of chilli, add the rice & mix it all up together.

I also experimented with star anise & a stick of cinnamon thinking about some kind of biryani hybrid. I’m not sure it worked. I would probably leave it out in the future. Or work on the spice mix to suit it better. We only had jasmine rice so there was a strange blend of not quit thai not quite indian pineapple rice, but somehow it worked.
