Ginger is the taste of Christmas, a natural winter warmer, heating the body from the inside out. It’s great for the immune system and perfect for a buzz of nostalgia.
What started so well, with the macadamias grinding to a lovely rough meal, didn’t end that way! The processor couldn’t handle the volume or bring it to the required dough. In the end I had to leave the mixture at home and go almost empty handed to the party.
I instead turned the mixture into energy bar little bites.
1 cup of chopped dates, soaked for an hour or so
1/2 cup of macadamias
1/2 cup of almonds
2 cups of desiccated coconut
2 tsps of ginger
1/2 tsp of mixed spice
pinch of salt
Begin by blending the nuts into a fine meal, then add the drained dates, coconut & powders. Blend until as fine as point as you can get to with your blender. Take the mixture and make little balls and press them into little squares with your hands.
Put them in a little box or wrap some up and make them more portable!
