Five months to spend pursuing a healthier, simpler existence!  At the start it sounded like such a long time, but four weeks have almost passed already and it’s passing by in a flash.  Filling my days with learning to Surf, practicing Yoga, giving massage, blogging, cooking lovely meals, reading, walking on the beach etc etc

With time I can get back to doing it myself! Preparing all my own meals, making almond milk, making treats and getting creative with ingredients and utensils. I wanted to make a treat and I wanted to do so by using the leftover ‘meal’ from making the almond milk. Without an oven I dehydrated it in a covered tray for about 20 hours and then started investigating the cupboards. I didn’t have agar flakes/some kind of coagulant to make the truly amazing peanut butter cups, which I unbelievably haven’t blogged!

We have lots of nuts, peanut butter, maple syrup and cocoa powder so I started from there and started throwing ingredients together!

Ingredients:

3/4 cup of almond meal

1 cup of sliced dates, soaked for one hour

1 cup of peanuts (ours were salted so I didn’t add any additional salt to the recipe

1 tblsp coconut oil

2 tblsps peanut butter

1 tblsp maple syrup

1 tblsp cocoa powder

Instructions:

– pulse the peanuts to break down into smaller pieces, without blending to a butter. Add the almond meal & pulse together to get a chunky ‘flour’

– add the other ingredients until you have a chunky paste.  If the blender gets stuck then use a fork to blend.

Chopped Dates

Nature’s candy, soaking dates to provide the sweetness and the stickiness to the recipe.

– I pressed some into silicon cups and rolled the others as balls.  Prepare as you wish and pop them in the fridge or my preference, the freezer.

They’re delicious as a naughty treat or as a pre or post surf energy boost!

  1. I’ve been searching for something to do with the leftover of the almond milk for ages… ❤ (which I've been drinking ever since you taught me how to do it on our beach retreat – never went back to drinking actual milk again)

    • I’m so happy to hear that Ligia!! You can dehydrate it and use it instead of flour in anything – bread is a good way to use it 🙂
